Sourdough Discard Pizza

Quick and Easy Sourdough Discard Pizza

The key: Make sure your pan is good and hot before you add the discard, then swirl it gently so it covers the pan, not too thickly.  Cook, add the toppings, then cook again.

Two differnt recipes, one one printable page, below

=====================

Sourdough discard pizza. This is a favorite for me - quick & easy.

· Preheat the oven, and cast iron skillet, to 450.

· Remove the pan from the oven, splash in enough oil to lightly - very lightly - coat the bottom.

· Pour in (mine is thick- so more "scrape in with a spatula") enough unfed sourdough starter [often called "discard"] to cover the bottom of the pan.  Tilt the pan so it spreads out to the edges.

· Bake 10 minutes.

· Remove from oven, add toppings, bake 10 more minutes.

The tangy sourdough crust pairs especially well with cherry tomatoes, spinach & hot honey.

Page 33 in my personal "Sour Notes" Sourdough Journal has two different recipes - the quick version, and one with added flour, from King Arthur Flour.
