Quick and Easy Sourdough Discard Pizza

The key: Make sure your pan is good and hot before you add the discard, then swirl it gently so it covers the pan, not too thickly.  Cook, add the toppings, then cook again.

I've also made this on the grill!  Heat the cast iron pan on the grill, cook the crust for about 10 minutes, then flip it out of the pan onto a cutting board [so it's upside down].  Top, then slide back onto the grill - crust straight on the grill - for another 10-15 minutes.

Sourdough discard pizza. This is a favorite for me - quick & easy.

· Preheat the oven, and cast iron skillet, to 450.

· Remove the pan from the oven, splash in enough oil to lightly - very lightly - coat the bottom.

· Pour in (mine is thick- so more "scrape in with a spatula") enough unfed sourdough starter [often called "discard"] to cover the bottom of the pan.  Tilt the pan so it spreads out to the edges.

· Bake 10 minutes.

· Remove from oven, add toppings, bake 10 more minutes.

This one was made on the grill - topped with mushrooms, pea shoots, and cowboy candy.  Drizzled with hot honey on top of the cheese.
