Pizza Gaina - Italian Easter Pie
An Italian dish, this is also known as Pizza Rustica. There are dozens of variations of the recipe, and I make it a little differently every time. They are most commonly filled with ham, salami, prosciutto, ricotta, mozzarella, and Romano cheeses.. Hard boiled eggs are frequently used as well.
Resurrection Cookies -
This is a memorable way to teach the Easter story - through a recipe! Each step of this meringue cookie recipe includes scripture, that is illustrated with the steps of the recipe. This is an old recipe - adapt the language and scriptures based on the ages and maturity level of the children helping.

Our daughter made a lot of money each spring, selling these, while in high school. She bought herself a new laptop one year with her profits.
Vintage Coconut Cake Recipe
From my husbands grandmothers cookbook - this is a depression era recipe.
Note that the cake includes no coconut, so my best guess is that is gets iced with a coconut icing. I've added a recipe for the icing.
